Eating grass-fed bison meat is a healthy choice. The American Heart Association recommends eating “lean cuts of emu, buffalo and ostrich. These are very low in total fat, saturated fat, cholesterol and sodium.” (May 4, 2015, “Meat, Poultry and Fish” recommendations)
Nutrition of Bison Meat
Dr. M. Marchello at North Dakota State University has assembled a nutritional comparison chart (see below) that identifies the healthy characteristics of bison meat. Compared to other meats, bison has lower fat, calories, and cholesterol. It also has higher iron and Vitamin B-12 than most all of the meats except for salmon.
